Brazilian Cheese Bread

Ingredients

  • 1 cup of tapioca starch, plus more as needed
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of garlic powder
  • 1/8 teaspoon of onion powder
  • 2 tablespoons + 2 teaspoons of olive oil
  • 1 1/2 tablespoons of non dairy milk
  • 1/4 cup of boiling water
  • 1/2 cup of cooked potato

Directions

Preheat the oven to 180C/350F and line a baking tray with parchment paper.


Add the tapioca, salt, garlic powder and onion powder to a bowl. Mix to combine, then set aside.


In a smaller bowl combine the oil, milk and water. Add this mixture to the bowl of dry ingredients along with the potato. Mix to form a dough, mashing the potato using the back of the spoon (the tapioca will instantly harden in response to the hot water. If it gets too tough for you to mix, transfer the entire contents of the bowl to a food processor and pulse until well combined). Add more tapioca starch as needed to form a non-sticky dough. Shape the dough into individual bites using 1 tablespoon per piece. Place on the baking tray and bake for 27-32 minutes, until lightly golden. Serve warm!

Notes

For a more authentic look, you can try adding a pinch of turmeric to the dough for a brighter yellow colour.
